Raw cane sugar: the crystalline sugar with an exotic charm

Raw cane sugar is obtained from sugar cane. Sugar cane is a sweet grass that was already known in eastern Asia in the 5th century BC and was used as a useful plant. Meanwhile, sugar cane is planted in tropical and subtropical climates around the world. The sweet grass forms an underground system of many rhizomes. Above ground, stalks with a diameter between 20 and 45 millimeters grow and sometimes reach a height of 6 meters.

Only the stalks of the sugar cane are processed for sugar production. The stalks are ground and pressed after harvesting to preserve the juice. The sugar cane juice is then heated and cleaned. After this step it is evaporated again to get the sugar crystals and molasses. During the natural crystallization process the sugar gets its characteristic granular structure.
